A Beef Jerky History Lesson and Recipe!

Originally, beef jerky in America was probably invented by Native Americans using whichever meat was available at the time; Bear meat, Buffalo meat, Mountain Lion and even Raccoon and smaller animals.

Worldwide, making jerky has no doubt been around since someone discovered that meat tasted better when it was cooked or smoked over a fire. This happened when a lightning bolt struck the first tree. Besides tasting better, it was healthier.

In the beginning meat was cooked on the end of a sharp stick or just thrown on the coals to burn. Much later, some unidentified frontier chef discovered that if you threw on a pile of wild onions with the meat, you had an onion flavored strip of jerky.

Native Americans learned that not everyone likes the taste of plain smoked meat. As time passed they began using various plants and herbs growing in the woodlands, mountains and deserts. They also came to know the plants that were harmful to humans.

Early settlers and North American Indians dried or jerked meat from Deer, Antelope, Elk or Buffalo, depending on the area of the country in which game was more plentiful. Moose meat was prevalent if you live in the Northwest. Deer was plentiful in the Southwest and northern Midwest.

This brings us today, and the way we make jerky. Now we use mostly beef for our jerky though where deer are plentiful, hunters make venison jerky. No longer does one have to build a teepee, build a smoky fire in the center with strips of meat dangling from poles hanging horizontally throughout the tent.

Nowadays, foodhydrators dehydrators are used to dry vegetables, fruits and meat. I use the personal ones with plastic trays and a small electric motor to distribute the heat. They are inexpensive but do a good job.

Instead of getting expensive steaks or roasts, I use the cheapest cuts of meat I can find, usually sirloin tip or round steak. After being in the freezer for a couple of hours, it is easy to cut into strips about an eighth of an inch. This way you can uniformly have precision cuts, which is almost impossible to do unless the meat is slightly frozen. With a slicer you can get a perfect cut every time, but most of us don't have such a machine.

Next, you will have to marinate the meat. Unless you like the taste of unadulterated meat, fresh out of the super market, you will have to buy or make your own marinade. I've learned to like my own recipe.

I try to make a low sodium Beef Jerky. Because most Soy Sauces and Worchester Sauces have 700 to 800 grams of sodium, I shop around for a premixed sauce that has these two ingredients with half the salt. A lot of sodium and high blood pressure do not mix.

Here is a recipe that I enjoy.

Ingredients:

2 pounds steak or roast or anything that is on sale
1 tablespoon sorghum molasses
2 teaspoons freshly ground black pepper
2 teaspoons onion powder
1 teaspoon red pepper powder
1 teaspoon garlic powder
3/4 cup Worcestershire sauce
3/4 cup soy sauce
2 teaspoons lemon juice

Once you have mixed all the above thoroughly, put it in any container that will hold it all and let it set overnight. Pour the mixture over the meat strips. Make sure all the meat is covered and then let it set for 45 minutes.

Next, place the strips of meat on the hydrator trays and let them cook for about eight hours. The hard part is done. Exercise a little patience and you will have surprisingly good beef jerky.

What Are The Different Types Of Beef Jerky

Beef jerky seems to cause extreme reactions in people. They either love it or hate it. I love it. Yes, eating beef jerky can be a marathon chewing experience. But I love the taste of it. It also helps me avoid eating too much junk food because after I eat a few pieces of beef jerky I'm satisfied and no longer want to consume an entire bag of potato chips.

Although beef jerky is relatively low in calories, it contains a lot of sodium so it's often not considered a health food. I consider it a fairly healthy snack though. It's a lot better for you than eating those chips I mentioned above or eating cake, pie, brownies, and candy bars.

If you like beef jerky but don't want to give your jaw a workout there's some types of beef jerky that are easy to chew. Look for pieces of beef jerky that are chopped and formed. They are much easier to chew than traditional beef jerky which is made from slices of beef. But the chopped and formed beef jerky is typically higher in calories and lower in protein than traditional beef jerky so it's not as good for you. You can also make your own easy to chew beef jerky if you have a food dehydrator, good quality ground beef, seasonings, and some patience.

If you look at your local store you'll usually find beef jerky seasoning packets right next to the food dehydrators. If you prefer to mix your own seasonings there are lots of free recipes available online. Do a search for "beef jerky seasoning recipe" or "beef jerky recipe" and you'll get tens of thousands of "hits." You'll have more recipes than you'll know what to do with.

I've made beef jerky at home with ground beef countless times. And although it's easy to make, it's an investment of time and patience. The ground beef and seasoning are mixed together (that's the easy part). Then the meat needs to be pressed into strips (this is the time-consuming part). The strips are then placed in the dehydrator. That's when p atience is required because, depending on what type of jerky you are making it takes 4-12 hours to dry and become jerky.
If you make your own jerky keep in mind that it shrinks a lot, sometimes up to two-thirds. You may think you're making a lot of jerky until you open your dehydrator back up after the meat has dried and you see little pieces of meat where there used to be big pieces of meat.

Although some people enjoy making their own beef jerky, most people prefer to buy their beef jerky already made. There are lots of choices. In addition to the choices at your local grocer and convenience store, many meat markets and butcher shops make and sell their own beef jerky.

The flavor choices are varied too. Although traditional beef jerky is my favorite flavor, I also enjoy peppered and teriyaki flavored beef jerky. Hot or jalepeno flavored beef jerky is also readily available at most stores, but if you like really hot beef jerky you might want to shop online where you have more choices of hot, hotter, and hottest flavors of jerky. Other flavors of beef jerky I've see n include: barbecued, hickory smoked, honey glazed, Hawaiian, lemon pepper, Cajun, Tex Mex and chili.

And, in addition to the traditional slices of beef jerky, you can now purchase shredded beef jerky and beef jerky chips.

If you're looking jerky that's made with something other than beef you have lots of choices too. There's turkey jerky (yummy), chicken jerky (also yummy), buffalo jerky (tastes a lot like beef jerky), ostrich jerky (not my favorite but I was predisposed to not like it because ostrich jerky didn't sound good to me), alligator jerky (wasn't a fan of this kind either), crocodile (wouldn't try it since I didn't like the alligator jerky) kangaroo (haven't worked up the courage to try this kind yet), Emu (scared of this one too), Wild Boar jerky (have only seen this kind online and haven't tried yet), Venison (it was okay but I'm not a fan of venison) and smoked Salmon (haven't tried this one yet but it sounds good).

I've also heard of people making their own trout jerky, goose jerky, and duck jerky. The choices seem nearly endless.

If you're wondering about the history of jerky and where it originated, it seems to be a little unclear. Some people say Native Americans made the first jerky (buffalo jerky) thousands of years ago. Other people say an ancient Inca tribe called the Quechua made the first jerky in the 1500's. Although the process to make beef jerky have changed and been modernized over time, the same basic procedure of thinly slicing meat, adding seasonings, and drying it with a low heat are the same as when jerky was first made.

Jerky is a food that's likely here to stay. And although beef jerky is by far the most popular type of jerky, more and more people are becoming adventurous in their tastes and want to try some of the more "exotic" types of jerky. Before modern food processing, man made jerky out of any available meat, with no more than the sun or a campfire. As long as the meat is lean and prepared properly, it can easily be made into jerky. Most importantly, the meat should be lean. Fatty meat will go rancid and will not dry properly. Fat in the meat will resul t in a subpar product that won't last very long out of the refrigerator (or even in it). Commonly, beef is used for jerky, in which case the best cuts to use are flank steak or round steak. Various game meats such as buffalo, elk, venison, caribou, and many others can also be used as long as lean cuts are chosen.

Some people swear by a dehydrator, which is a multi-tasker than can be used for much more than just drying meat. While a dehydrator can make excellent jerky, it is by no means necessary and an oven will easily suffice. A smoker can also make excellent jerky, while imparting a stronger smoky taste, which many people appreciate. Sun drying is possible, but risky if proper safety measures are not taken, and can also take a much longer time to dry your meat effectively.

The easiest way to prepare the meat is by freezing it to the point of firmness but while it is not yet fully frozen. Cut the meat into strips no more than a quarter of an inch thick, half to three quarters of an inch wide, and six to eight inches long for the perfect working size. You should cut the meat across the grain to ensure a proper finished texture, and again, make sure than all visible fat and gristle has been removed.

Seasonings are multiple and varied. In the olden days, beef was merely treated with salt and pepper and dried, which actually results in quite a satisfying end product. Meat is more commonly marinated these days, however, but there are still many dry rubs and other methods used that can make great beef jerky. Some folks engage in what is called a 'quick cook' method to start the process, whereby the meat strips are dropped in a pot of boiling water for a minute or two, which may kill any bacteria that may be on the meat and prepares the meat for a dry rub. While this is one method, often simply marinating the meat for a period of time results in more depth of flavor and is just as safe; however both choices produce tasty beef jerky.

Making Beef Jerky

Most dehydrators will come with instructions for drying jerky, and they usually vary from machine to machine. For most people, the oven is a convenient way of making jerky at home, and is simple and readily available. For this, you will need a wire rack for the meat to dry on and a cookie sheet or low pan underneath to catch the drippings. Generally speaking, set your oven to 140 degrees and let it get to temperature. Prepare and marinate the meat according to your instructions (a great, simple beef jerky recipe will follow this article). Place the strips of meat on the wire rack and place in the oven above the sheet or pan and leave the door of the oven open a crack. The beef jerky should be ready in six to eight hours, and you will k now when it is done when it has turned very dark, and when it is bent, it will slightly crack but not break.

If you happen to have a smoker, this is a good option as well since the additional smoke flavor from the smoker will enhance the taste of the jerky in a way that liquid smoke just can't. Only a small handful of coals should be fine or eight bricks of charcoal if you don't have any wood handy. Remember to keep the heat down to about 140 degrees as you are not trying to cook the beef, just dry it out. You may have to add some coals as time goes on, as it should take six to eight hours for the beef jerky to be ready.

Storing your jerky

When your jerky has dried, let it cool completely before removing from the rack. Then place it in zip-lock bags or air tight jars. It will keep many weeks in the refrigerator, and will last years in the freezer. Just grab a piece for an anytime snack, or put it in a pocket or bag for an on-the-go treat . Beef jerky is simple and inexpensive to make at home, and a highly nutritious treat for anyone, anywhere.

Easy Basic Beef Jerky Marinade:

1 1/2 lb Lean Boneless Beef
1/4 Cup Soy Sauce
1 ts Worcestershire Sauce
1/2 ts Onion Powder
1/4 ts Ground Black Pepper
1/4 ts Garlic Powder
1/4 ts Liquid Smoke
Vegetable oil cooking spray for rack

In a medium-size glass, stoneware, plastic or stainless steel bowl, combine soy sauce, Worcestershire, onion powder, pepper, garlic powder, and liquid smoke. Stir to dissolve seasonings. Add meat and mix until all surfaces are thoroughly coated. Cover tightly and refrigerate for at least 6 hours or until next day, stirring occasionally; recover tightly after stirring. Step4: Dehydrate Meat Preheat your oven to 150 degrees. Place strips of meat on a wire rack over a foil-lined cookie sheet and place in the oven. Keep the oven door cracked a bit while drying to let out any extra moisture. If you are making your jerky in a dehydrator, place meat evenly on racks, making sure the strips are not touching. Now rememberthis step takes time. The perfect jerky can take anywhere from 6 to 12 hours to completebut trust me--its worth the wait!! Begin to check the jerky frequently after 6 to 7 hours. Your jerky will be done when it appears firm and dry. It should bend so it cracks a bit, but should not snap in half.

STEP 5: Store Meat If you are anything like me and will eat up your jerky in a matter of days, you can store it in a sealed container or Ziploc baggie at room temperature. Also, placing jerky in plastic bags and storing it in your refrigerator or freezer will ensure freshness for several months!

The best 5 beef jerky recipes to make the ultimate beef jerky

Beef Jerky #1

2 lbs round steak (or flank or brisket)
1/4 C. soy sauce
1 Tbsp. Worcestershire
1/4 tsp. ea. pepper and garlic powder
1/2 tsp. onion powder
1 tsp. hickory smoke-flavored salt

Trim and remove fat from meat. Cut meat in 1/8 to 1/4 thick slices. In a bowl combine all but meat. Stir until seasonings dissolve. Add meat and mix thoroughly. Let stand one hour. Shake off excess liquid and put meat slices on oven racks or shallow baking pan. Dry meat at lowest possible oven temp (maybe 180 or 200) until it is brown, hard, and dry. Can take as long as 24 hours.

Beef Jerky #2

1 1/2 lb Flank steak

Select a 1/2 inch think flank or top round steak. trim away all fat then partially freeze until firm. Slice across the grain in a 1/4 to 1/2 inch wide strips. Place meat strips in a shallow dish or heavy plastic bag. Add soy or terriyaki sauce to cover meat. If desired onion or garlic powder or Worcest ershire sauce can be added. Toss to coat each piece. Cover and refrigerate several hours or over night. Lift meat from marinade, drain will then air dry for a couple of hours. Arrange meat strips in single layer on fine wire screen or cake cooling rack. Place in low temp. oven (175 to 200 degrees) or slowly smoke-cook in smoker until meat is completely dried. Store in air-tight container. Serve as a snack or appetizer.

Beef Jerky #3

1/2 ts Pepper (MORE FOR HOT)
1/2 ts Garlic Powder
1/2 ts Onion Salt
1 lb Beef Roast
1/2 c Soy sauce
1/2 ts Garlic Salt
1/2 ts Lemon Pepper

Marinate 1 hour or overnight. Bake in oven 150 to 170, overnight for 10 - 12 hours.
Beef Jerky #4

1 Flank Steak Or London Broil
Coarse Black Pepper
1/2 c Soy Sauce
Garlic Powder

Cut flank steak or london broil into 1/4" strips. Sprinkle with garlic powder and coarse ground black pepper. Marinate in soy sauce for 24 hours. Bake in 150 degree F oven for 10 to 12 hours. DO NOT exceed 150 degrees F.

Beef Jerky #5

2 lb London Broil
1/2 c Soy sauce
2 tb Worstershire sauce
2 ts Garlic powder
2 ts Onion powder
2 ts Fresly ground black pepper
2 ts Re d pepper flakes
2 tb Liquid smoke

Freeze the London Broil or other lean roast. When ready to make jerky, remove the roast from the freezer and let partially thaw. When just able to slice, first cast out all fat and then slice against the grain in thin (1/4 inch or less) slices. Cover the meat with the marinade, turn from time to time and let marinate overnight. In the morning line a shallow cookie sheet with a few layers of paper towels. Place on lower rack. Place upper rack in oven in top position and lower rack in lower position. Hang the beef slices from the upper rack with tooth picks above the paper towels. 6 hours at 160F average temp is about right. Everyone loves to go out an eat at fast food restaurants and dine in restaurants, but with the cost of gas being so high plus with just the cost of one meal for a single person being 5 dollars or more, eating out 3 or more times a week can be very expensive.

I have been trying to come up with some cheap homemade meals that taste great and dont take hours to make, and I have been doing some internet searching and I found a product called Americas Secret Recipes. 8 oz. of Tomato Sauce

tsp. Seasoned Salt

How To Clean Sterling Silver Jewelry At Home

Turn on the faucet and let the water get hot while you are preparing your cleaning solution. Line your container with aluminum foil, the shiny side up. Make sure you line the sides of the container too. Put in the container 1/4 cup of baking soda, 1 tablespoon salt, 1 tablespoon liquid dishwashing detergent, and then fill the container with hot water. Mix with a spoon. Drop your Sterling Silver jewelry into the container. Let soak for 20 minutes. When done, rinse all your items with warm water and dry on a paper towel. Plug your sink while rinsing so nothing falls down the drain.

Chocolate Banana Cake Recipes

My friend Winifred loves baking, so whenever she has time to spare or an occasion to celebrate, you will find her in the kitchen doing what she is good at. To her, baking is not a chore but a method she uses to relax! As I walked past her house a few days ago, the aroma of the cake surrounded it. No matter how hard I tried I couldn't stop myself from ringing the doorbell and inquiring about the cake. She invited me in and offered me a nice big slice of the chocolate banana cake she had made, and ever since that day, this cake is my favorite.

Easy Chocolate Banana Cake Recipe

Ingredients

2 eggs 2 cups of flour teaspoon of salt a teaspoon of vanilla 1 cups of brown sugar a cup of margarine (softened) 3 square pieces of unsweetened chocolate (melted) a teaspoon of baking soda 1 teaspoon of baking powder 1 cups of ripe bananas (mashed)

How to Make It

First cream the brown sugar and margarine until it becomes light and fluffy. Now add one egg at a time and beat the mixture thoroughly after each. Then dry sift the ingredients together and add to the batter alternatively with the bananas. Slowly stir in vanilla. Once all this is done, pour it into 2 greased and floured 9-inch cake pans and bake in an oven that has been preheated to 350 degrees. Keep the cake in the oven for about 35 to 40 minutes, or until the cake test reveals it is done. Frost the cake with the frosting of your choice!

Ingredients for the Cake

c. of butter 4 eggs (separated) 1/8 teaspoon of salt c. of ground pecans 6 oz. of sweet cooking chocolate c. of granulated sugar c. of mashed potatoes

Ingredients for the Sauce

2 tablespoon of powdered sugar c. of whipping cream 1/8 teaspoon of cinnamon (ground) 1 c. of mashed bananas Pecan halves (toasted)

How to Make It

First heat the oven to 375 degrees. Next, grease and flour 8 x 2 inch pans. Then heat the butter and chocolate in a 1 quart saucepan until it is totally melted and let it cool for about 5 minutes.Once this is done, put the egg whites and salt in a medium bowl and beat it at high speed until it is stiff but not dry. Take another bowl and beat the egg yolks and sugar in it at medium speed until it turns lemon colored. Now stir it into the chocolate along with the banana and ground pecans and gradually fold the chocolate mixture into the egg whites. Pour the mixture into the pan and bake it until the top is dry and a knife comes out clean. This should take about 40 to 45 minutes.When the cake is ready, take it out of the oven and let it cool completely. Then remove from pan. Now beat the bananas, cream, cinnamon and powdered sugar together until it is well blended. Now that the cake is ready, serve it along with the sauce, garnished with pecans.

Milk Chocolate Banana Cake Recipe

Ingredients

2 eggs 1 teaspoon of cinnamon a teaspoon of salt a cup of milk chocolate chips 2 cups of bananas (mashed) 125 ml of skimmed or soy milk 125 ml of canola oil 2 teaspoon of lemon juice 2 teaspoon of vanilla 325 ml of whole wheat flour 120 ml of all-purpose flour 300 ml of sugar (granulated) 50 ml of cocoa powder (unsweetened) 1 teaspoon of baking powder 1 teaspoon of baking soda Some icing sugar (optional)

How to Make It

First line a 13 x 9 inch pan with parchment paper. Next take a large bowl and mix the milk, oil, lemon juice, eggs, vanilla and bananas in it. Once it is mixed properly, stir in the all-purpose flour, whole wheat, cocoa powder, baking powder, baking soda, sugar, cinnamon and salt. Now beat the mixture gently for 2 minutes with the help of an electric mixer. Then stir in the chocolate chips until it is combined.Once that is done, pour the batter into the prepared pan and bake it at 350 degrees until a toothpick or knife inserted into it comes out clean. When the cake is done, move it to the rack and let it cool. If you are using icing sugar, sprinkle the cake with it!
